Ingredients
Salad
- 100g feta cheese
- 1 can of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 30g red capsicum, diced
- 30g tomato, diced
- 10g parsley, chopped
- 20ml lemon oil dressing
How it's made!
1. Begin by preparing all the ingredients. Rinse and drain the chickpeas, then chop the cucumber, red onion, red capsicum, tomato, and parsley.
2. Crumble the feta cheese into small pieces.
3. In a mixing bowl, combine the chickpeas, cucumber, red onion, red capsicum, tomato, and parsley. Toss gently to combine.
4. Drizzle the lemon oil dressing over the salad and toss again to coat everything evenly.
5. Add the crumbled feta cheese to the salad and gently toss once more.
6. Serve the salad chilled or at room temperature. It can be enjoyed as a light lunch or as a side dish to accompany a main meal.
